
CHOCOLATE BIRTHDAY CUPCAKES
1 1/2 cups all purpose flour
1/4 cup unsweetened cocoa power sifted
1 tsp baking powder
1/2 tsp kosher salt
1/4 tsp baking soda
1/2 cup whole milk
1/2 cup sour cream
1/2 cup unsalted butter room temperature
1 1/4 cup sugar
2 eggs, plus 1 egg yolk
4 oz bittersweet chocolate melted
1 tsp pure vanilla extract
Preheat the oven to 350ºF. In a bowl stir together the flour, cocoa, baking powder, salt and baking soda. On another bowl whisk together the milk and sour cream. Beat together the butter and sugar on high speed until light and fluffy. Add one egg at a time and the egg yolk, beat well. Add the melt chocolate and the vanilla. With a spatula mix in the flour. Put in on a muffin tray an bake for 30-40 minutes.
- VANILLA BUTTERCREAM
250g unsalted butter room temperature
4 cups confectioner's sugar sifted
1 tsp salt
1/4 cup whole milk
2 tsp vanilla extract
Beat together the butter, confectioners' sugar and salt on medium speed until combined. Increase the speed to high and beat until fluffy. Add the milk and vanilla and mix until fluffy.
